– 1 whole chicken (1.5-2 kg), skin removed

– 2 tablespoons lemon juice
– 2 tablespoons ghee or oil
– 2 teaspoons ginger paste
– 2 teaspoons garlic paste
– 1 teaspoon cumin powder
– 1 teaspoon coriander powder
– 1 teaspoon red chili powder (optional, for some heat)
– 1 teaspoon kashmiri or without spicy red chilli powder ( for colour)
– 1 teaspoon Turmeric powder ( for colour – optional)
– 1 teaspoon garam masala powder
– 1/2 teaspoon salt (as per taste)
– 1/4 teaspoon black pepper
– 2-3 green cardamom pods
– 1 cinnamon stick
*For Tandoori Masala*
– 2 tablespoons coriander seeds
– 1 tablespoon cumin seeds
– 1 cinnamon stick
– 1 tablespoon cardamom powder
– 1/2 tablespoon red chili powder (optional)
– 1/2 tablespoon garam masala powder
– 1/4 tablespoon black pepper
Instructions
*Step 1: Prepare Tandoori Masala*
In a pan over medium heat, dry roast the cinnamon stick, cumin seeds, and coriander seeds until aromatic.
Using a spice grinder or mortar and pestle, crush the roasted spices into a fine powder.
Combine the ground spices with the remaining ingredients for the tandoori masala.
