Vegetable Tehri

Vegetable tehri a rice dish with vegetables in it. It can be served with raita. Delicious rice recipe in quick time.

INGREDIENTS

  • 1 cup basmati rice.
  • 2 medium potatoes.
  • 1 onion.
  • 10 cauliflower florets.
  • 1/4 cup beans.
  • 1/4 cup carrot.
  • 1/2 cup green peas.
  • 1 tsp Ginger-Garlic paste.
  • 2-3 green chilli.
  • 3 tbsp oil.
  • 1 bay leaf.
  • 2 cinnamon sticks.
  • 5-6 cloves.
  • 8-10 black peppercorns.
  • 1 black cardamom.
  • 1/2 tsp cumin seeds.
  • 1/2 tsp turmeric powder.
  • 1/2 tsp red chilli powder.
  • 1/2 tsp coriander powder.
  • 1/2 tsp cumin powder.
  • Salt.
  • 1 tomato.
  • 1/2 tsp Garam masala.

INSTRUCTIONS TO MAKE

  1. In a bowl wash basmati rice and soak for 30 mins.
  2. In a pressure cooker heat oil, add potatoes and saute for 1-2 mins.
  3. Add cauliflower florets, carrot, beans and saute till everything turns light brown.
  4. Take out all the vegetables in a plate.
  5. Add cumin seeds, cinnamon sticks, Bay leaf, black cardamom, cloves and peppercorns and saute for a min.
  6. Add onion, green chilli and Ginger-Garlic paste and saute till it turns brown.
  7. Add tomato, turmeric powder, red chilli powder, coriander powder, cumin powder, salt and saute till tomatoes turns mushy.
  8. Add green peas and mix well.
  9. Add soaked rice and mix well.
  10. Add water and Garam masala and mix well.
  11. Cook for 1 whistle and let it cool completely.
  12. Open cooker and mix gently and serve.
