Sweetcorn Veg Soup
Sweet corn soup a well needed soup in winters. It’s tastes soo good and great for health too. Tangy, sweet and delicious soup recipe at home.
INGREDIENTS
- 1 cup sweet corn.
- 1 tbsp butter.
- 1 tbsp grated ginger.
- 1 tbsp grated garlic.
- 2 green chilli.
- 1/4 cup spring onion.
- 1/4 cup carrot.
- 1/4 cup beans.
- 1 litre water.
- Salt as per taste.
- 2 tsp sugar.
- 1/2 tsp white pepper powder.
- 1 tbsp corn flour.
- 1 tsp vinegar.
- 1/4 cup spring onion greens.
INSTRUCTIONS TO MAKE
- In a mixer jar add 1/2 cup corn and 2 tbsp water and blend coarse.
- In a wok heat butter and add grated ginger, garlic and green chilli and saute 1-2 mins.
- Add spring onion and saute few mins.
- Add finely chopped carrot, beans, sweet corn and mix well and saute 3-4 mins.
- Add corn paste and mix well.
- Add 1 litre water and mix well.
- Boil for 8-10 mins and remove all scurf.
- Add sugar, salt and white pepper powder and mix well.
- In a small bowl add 1 tbsp corn flour and add 1/4 cup water and mix well.
- Pour the corn slurry in the soup and mix well.
- Add spring onion green and vinegar and mix well.
- Once soup thickens switch off the flame and serve hot.
