Stuffed karela recipe

Stuffed karela or bharwa karela tastes delicious and do not tastes bitter. It has a tangy flavour. It’s healthy as well as quick to make.


  • 4 bitter gourd.
  • 3 tbsp oil +oil for frying.
  • 1 tsp panch phoron.
  • 1/4 tsp asafoetida.
  • 5-6 chopped garlic.
  • 1 chopped onion.
  • 1/2 tsp turmeric powder.
  • 1 tsp red chilli powder.
  • 2 tsp coriander powder.
  • 2 tsp dry mango powder.
  • 1 tsp Garam masala.
  • Salt.


  1. Scrape the skin of bottle gourd and make a long cut.
  2. Remove all the seeds from it.
  3. Reserve skin and seeds for stuffing.
  4. Coat the bottle gourd well with salt and leave it for 20-25 mins.
  5. Add salt on skin and seeds and leave it for 20-25 mins.
  6. After 20-25 mins wash the bottle gourd with water.
  7. Wash the skin and seeds as well.
  8. In a pan heat oil and add panch phoron, asafoetida and saute few seconds.
  9. Add chopped garlic and saute for a min.
  10. Add chopped onion and saute few mins.
  11. Add skin and seeds of bottle gourd and cook for 6-7 mins.
  12. Add turmeric powder, red chilli powder, coriander powder, salt, dry mango powder and mix well.
  13. Add garam masala and mix well.
  14. Add 2 tbsp water and mix all well and cook few mins.
  15. Transfer the stuffing in a bowl.
  16. Fill the stuffing in the bottle gourd and tie with thread.
  17. In a pan heat oil and fry the bottle gourd until it turns brown from all sides (cook on medium-low flame).
  18. Remove thread before serving.
