Sev tamatar ki sabji – No onion no garlic sabji

Sev tamatar ki sabji can be served with roti and parathas. This sabji is made of without onion and garlic. Tastes tangy and flavorful. Tomatoes and jaggery balanced out the flavours together.


  • 1 cup Sev.
  • 3 tbsp oil.
  • 1/2 tsp mustard seeds.
  • 1/2 tsp cumin seeds.
  • 1/4 tsp asafoetida.
  • 3 green chilli.
  • 1 tbsp grated ginger.
  • 4 chopped tomatoes.
  • 1/2 tsp turmeric powder.
  • 1 tsp red chilli powder.
  • 1 tsp coriander powder.
  • Salt as per taste.
  • 1/2 tsp garam masala.
  • 2 tbsp coriander leaves.
  • 1 tbsp jaggery.
  • 1 tbsp clarified butter.


  1. In a wok heat oil and add mustard seeds, cumin seeds, asafoetida, green chillies and grated ginger and saute for few seconds.
  2. Add chopped tomatoes and mix well.
  3. Cover and cook tomatoes till it turns mushy.
  4. Once tomatoes turns mushy add turmeric powder, red chilli powder, coriander powder, salt as per taste and mix well.
  5. Add garam masala and mix well.
  6. Once oil starts releasing from sides add 1.5 cup water and bring it to a boil.
  7. Add coriander leaves, jaggery and clarified butter/ghee in it and mix well
  8. Add 1 cup Sev and mix well.
  9. Cook for 2 mins and serve.
