Schezwan Sauce

Schezwan sauce is a spicy sauce made out of dry red chillies. It’s mostly used in Chinese dishes. It’s spicy, hot and flavorful sauce.


  • 100 gms dry red chilli.
  • 1/2 cup oil.
  • 1/4 cup chopped garlic.
  • 2 tbsp chopped Ginger.
  • 2 tsp soya sauce.
  • 1 tbsp sugar.
  • Salt.
  • 2 tbsp Vinegar.
  • 2 tbsp tomato sauce.


  1. In a bowl add dry red chilli and add hot water and let it soak for 30 mins.
  2. After 30 mins drain water and blend into paste.
  3. In a pan heat oil and add chopped garlic and ginger and slightly saute it.
  4. Add paste and cook for 5 mins.
  5. Add 1 cup water and mix well.
  6. Cover and cook for 15-20 mins stiring it occasionally.
  7. Add soya sauce, sugar, salt, vinegar, tomato sauce and mix well.
  8. Cover and cook for another 5 mins.
  9. Let it cool completely and store in a air tight container and use upto 1-2 weeks.
