Mix veg pulao

Mix veg rice is a delicious one pot rice recipe. It has lots of vegetables in it. It’s healthy and tasty. It’s easy to make. Quick and delicious rice recipe.

INGREDIENTS

  • 1 cup basmati rice.
  • 150 gms paneer.
  • 2 tbsp oil.
  • 3 tbsp clarified butter.
  • 1 bay leaf.
  • 1 black cardamom.
  • 2 green cardamom.
  • 1 inch cinnamon.
  • 5 cloves.
  • 10 peppercorns.
  • 2 dry red chilli.
  • 1/2 tsp cumin seeds.
  • 1 sliced onion.
  • 1 tsp ginger-garlic paste.
  • 2 green chilli.
  • 1 potato.
  • 1/4 cup cauliflower.
  • 2 tbsp beans.
  • 2 tbsp capsicum.
  • 2 tbsp carrot.
  • 1/4 cup frozen peas.
  • Salt as per taste.
  • 1/2 tsp garam masala.
  • 2 tbsp coriander leaves.

INSTRUCTIONS TO MAKE

  1. In a bowl wash basmati rice and add water and soak for 30 mins.
  2. In a pan heat oil and roast the paneer till it turns light brown.
  3. Once it turns light brown take it out in a plate.
  4. In a pressure cooker heat clarified butter and add cumin seeds, black cardamom, green cardamom, dry red chilli, bay leaf, cinnamon, cloves and peppercorn and saute few seconds.
  5. Add sliced onion and saute few seconds.
  6. Add green chilli, ginger-garlic paste and mix well.
  7. Add potato, cauliflower, beans, carrot, capsicum and mix well.
  8. Add salt and saute the veggies for 3-4 mins.
  9. Add forzen peas and mix well.
  10. Add soaked rice and mix well.
  11. Add garam masala, fried paneer and coriander leaves and mix well.
  12. Add 1.5 cup water and mix well.
  13. Cook it for one whistle and let the pressure cooker cool down completely.
  14. Once pressure cooker cools down completely open it and mix the rice gently.
