Matar Pulao Recipe

INGREDIENTS
- 1 cup basmati rice.
- 2 tbsp clarified butter.
- 1 cup green peas.
- 1 large onion.
- 2 green chilli.
- 1 tbsp ginger-garlic paste.
- 10-12 cashew nuts.
- 1/2 tsp cumin seeds.
- 1 bay leaf.
- 3 cinnamon sticks.
- 2 green cardamom.
- 1 black cardamom.
- 10 black peppercorns.
- 6 cloves.
- 1 star anise.
- 1/2 tsp garam masala.
- Salt.
INSTRUCTIONS TO MAKE
- In a bowl wash rice well and soak it with water for 20 mins.
- In a pressure cooker heat clarified butter and add cumin seeds, bay leaf, green cardamom, black cardamom, black peppercorns, cloves, star anise, cinnamon sticks and saute for a min.
- Add onion and saute 2-3 mins.
- Add Ginger-Garlic paste, green chilli, cashew nuts and saute for 3-4 mins.
- Add green peas and saute for 2 mins.
- Add water, salt, garam masala and mix well.
- Add soaked rice and mix well.
- Cook for 2 whistle and let the cooker cool down completely.
- Open the lid and stir gently and serve.
