Matar Pulao Recipe

INGREDIENTS

  • 1 cup basmati rice.
  • 2 tbsp clarified butter.
  • 1 cup green peas.
  • 1 large onion.
  • 2 green chilli.
  • 1 tbsp ginger-garlic paste.
  • 10-12 cashew nuts.
  • 1/2 tsp cumin seeds.
  • 1 bay leaf.
  • 3 cinnamon sticks.
  • 2 green cardamom.
  • 1 black cardamom.
  • 10 black peppercorns.
  • 6 cloves.
  • 1 star anise.
  • 1/2 tsp garam masala.
  • Salt.

INSTRUCTIONS TO MAKE

  1. In a bowl wash rice well and soak it with water for 20 mins.
  2. In a pressure cooker heat clarified butter and add cumin seeds, bay leaf, green cardamom, black cardamom, black peppercorns, cloves, star anise, cinnamon sticks and saute for a min.
  3. Add onion and saute 2-3 mins.
  4. Add Ginger-Garlic paste, green chilli, cashew nuts and saute for 3-4 mins.
  5. Add green peas and saute for 2 mins.
  6. Add water, salt, garam masala and mix well.
  7. Add soaked rice and mix well.
  8. Cook for 2 whistle and let the cooker cool down completely.
  9. Open the lid and stir gently and serve.
