Ghiya ki Sabzi
Ghiya ki sabji without onion and garlic. It’s a very healthy and tasty Indian curry. Quick and healthy Ghiya ki sabji. It’s a combination of tomato gravy with the tangy taste of dry mango powder. Little spicy little tangy perfect balance of flavours.
INGREDIENTS
- 500 gms bottle gourd/Ghiya.
- 4 medium tomato paste.
- 1 tbsp grated Ginger.
- 2 chopped green chilli.
- 4 tbsp oil.
- 1/2 tsp turmeric powder.
- 1 tsp red chilli powder.
- 3 tsp coriander powder.
- Salt.
- 1 tsp garam masala.
- 1/2 tsp dry mango powder.
- 2 tbsp coriander leaves.
- 1.5 cup water.
- 1 tsp panch phoron.
- 1/4 tsp asafoetida.
INSTRUCTIONS TO MAKE
- In a wok heat oil.
- Add panch phoron, asafoetida and saute for a min.
- Add tomato paste, grated Ginger, green chilli and cook for 5 mins.
- Add turmeric powder, red chilli powder, coriander powder,salt and mix well.
- Cook the masala till oil releases on medium-low flame.
- Once oil releases add garam masala, dry mango powder and mix well.
- Add water and let it boil once.
- Add bottle gourd/Ghiya and cook for 15-20 mins on medium-low flame.
(You can also pressure cook for 3-4 whistle) - Add coriander leaves and mix well.
