Garam Masala Recipe
Garam masala is a fine powder which is basically added to various curries to enhance it’s taste. It has various flavour which makes Curries tasteful.
INGREDIENTS
- 1/2 cup coriander seeds.
- 1/4 cup cumin seeds.
- 2 tbsp peppercorns.
- 1 tbsp clove.
- 6-7 bay leaf.
- 20 pods green cardamom.
- 10 pods black cardamom.
- 3-4 mace.
- 1 medium size nutmeg.
- 2 star anise.
- 1 tbsp fennel seeds.
- 1 tbsp Caraway/Shah jeera.
- 12- 14 cinnamon sticks.
INSTRUCTIONS TO MAKE
- In a pan roast coriander seeds for 2 mins on low flame and take it out in a bowl.
- Roast cumin seeds for 2 mins on low flame and take it out in the same bowl.
- Roast the peppercorns and cloves for 1-2 mins as well and take that out in the same bowl.
- Roast cinnamon sticks for 2-3 mins on low flame and take out in same bowl.
- Roast fennel seeds and Caraway/shah jeera for 2 mins and bring out in same bowl.
- Roast green and black cardamom for 2 mins and take out in same bowl.
- Roast bay leaf for 1 mins and add in same bowl.
- Add mace, nutmeg, star anise and roast for 2 mins on low flame and take all out in same bowl.
- Let the mixture cool down a bit.
- Roughly break the bay leaf into small pieces.
- Take all the mixture in a blending jar and blend into fine powder.
- Do not blend continuously to avoid over heating.
- Take breaks in middle while grinding.
- Sieve and blend the leftover mixture again.
- Store and use.
