Sweetcorn Veg Soup

Sweet corn soup a well needed soup in winters. It’s tastes soo good and great for health too. Tangy, sweet and delicious soup recipe at home.

INGREDIENTS

  • 1 cup sweet corn.
  • 1 tbsp butter.
  • 1 tbsp grated ginger.
  • 1 tbsp grated garlic.
  • 2 green chilli.
  • 1/4 cup spring onion.
  • 1/4 cup carrot.
  • 1/4 cup beans.
  • 1 litre water.
  • Salt as per taste.
  • 2 tsp sugar.
  • 1/2 tsp white pepper powder.
  • 1 tbsp corn flour.
  • 1 tsp vinegar.
  • 1/4 cup spring onion greens.

INSTRUCTIONS TO MAKE

  1. In a mixer jar add 1/2 cup corn and 2 tbsp water and blend coarse.
  2. In a wok heat butter and add grated ginger, garlic and green chilli and saute 1-2 mins.
  3. Add spring onion and saute few mins.
  4. Add finely chopped carrot, beans, sweet corn and mix well and saute 3-4 mins.
  5. Add corn paste and mix well.
  6. Add 1 litre water and mix well.
  7. Boil for 8-10 mins and remove all scurf.
  8. Add sugar, salt and white pepper powder and mix well.
  9. In a small bowl add 1 tbsp corn flour and add 1/4 cup water and mix well.
  10. Pour the corn slurry in the soup and mix well.
  11. Add spring onion green and vinegar and mix well.
  12. Once soup thickens switch off the flame and serve hot.
