Malai Kofta Recipe

Malai kofta is a very popular Indian vegetarian curry. It is rich in taste and the creamy gravy is poured over the hot fried paneer balls. Full of flavours and taste. Super delicious Malai kofta recipe can be served with Rotis, parathas, etc

INGREDIENTS

For koftas

  • 200 gms cottage cheese/Paneer.
  • 3 boiled and mashed potatoes.
  • 1/2 tsp garam masala.
  • 2 green chilli.
  • Salt.
  • 2 tbsp coriander leaves.
  • Chopped cashew nuts.
  • Raisins.
  • 4 tbsp cornflour.
  • Oil for frying.

For Gravy

  • 4 tbsp oil.
  • 1 Bay leaf.
  • 1 inch cinnamon stick.
  • 1/2 tsp cumin seeds.
  • 8-10 peppercorns.
  • 4-5 cloves.
  • 3 cardamom pods.
  • 2 medium onion.
  • 4 medium tomato.
  • 2 green chilli
  • 8-10 garlic.
  • 2 inch ginger.
  • 10-12 cashew nuts.
  • 1 tbsp butter.
  • 1 tsp kashmiri red chilli powder.
  • 1/2 tsp turmeric powder.
  • 1 tsp coriander powder.
  • Salt.
  • 1 tsp fenugreek powder.
  • 1/2 tsp garam masala.
  • 1/4 cup cream.
  • 2 tbsp coriander leaves.

INSTRUCTIONS TO MAKE

  1. In a bowl add cottage cheese, boiled and mashed potatoes and mash them well.
  2. Add green chilli, coriander leaves, garam masala, salt, corn flour and mash well.
  3. Take a small portion of it and make balls.
  4. Flatten it and filled the center with cashew nuts and Raisins and make balls.
  5. Deep fry until it turns golden brown.
  6. Take out in kitchen towel.
  7. In a wok add oil.
  8. Add bayleaf, cumin seeds, cinnamon stick, peppercorns, cloves, cardamom and saute for a min.
  9. Add onion, garlic, ginger, green chilli and mix well.
  10. Cook everything well untill onion browns.
  11. Add tomatoes, cashew nuts, salt and mix all well.
  12. Cook till tomatoes soften.
  13. Once tomatoes become soft and mushy.
  14. Switch off the gas and let the mixture cool completely.
  15. Blend the mixture into puree.
  16. Strain the puree using strainer.
  17. In the same wok add butter, kashmiri red chilli powder, turmeric powder, coriander powder and mix well.
  18. Add puree and mix well.
  19. Add 1/2 cup water and mix well.
  20. Add salt and cook for 4-5 mins.
  21. Add garam masala, fenugreek powder and mix well.
  22. Add cream and mix well.
  23. Add coriander leaves and switch off the flame.
  24. In a plate serve the koftas and pour the hot gravy on it and garnish with cream and serve hot.
